i baked a loaf of focaccia in the same pan i cooked the other two layers in so everything was the same size. the yeast i used was p much dead so not too much on my focaccia… the just egg layer had seasoning, diced red bell pepper, red onion, and baby kale in it. and cheese on top. i added sage and fennel and whatnot to the tube of lightlife sausage i bought so it tasted more breakfasty. the sandwiches r vegan☺️

    Don’t they go stale or soggy? I don’t think I could stomach an old sandwich.

  2. There was no frame of reference on the first image so I thought they were 2 bite finger sandwiches. They’re huge!

    Just for future reference, fennel is the hallmark of Italian sausage and not not used in breakfast sausage. For breakfast sausage you had the sage right, also marjoram and nutmeg are required.

    I often turn one into the other out of immediate necessity. It works for the most part unless you have a really fennely Italian sausage trying to turn it into breakfast sausage.
